These cookies & cream brownies embody the essence of 500 cookies packed into one irresistible treat. With National Brownie Day on the horizon, it's the perfect occasion for a celebration that's grand, indulgent, and undoubtedly high in calories. If you're a fan of Oreos, brownies, and chocolate, this recipe promises to be a decadent delight.
Brownie Base
This 9×13-inch pan of brownies offers a versatile base. While I won't delve into extensive detail about the brownie base, you have the option to use either homemade brownies or boxed brownies. Naturally, I advocate for my homemade brownies, known for their fudgy texture and quick preparation time of about 10 minutes. However, I understand that schedules can be hectic, especially during the holidays, so feel free to use your preferred boxed mix if necessary.
The Oreo Layer
Before baking, press Oreos into the top of the brownie batter. I recommend opting for Double Stuf Oreos, which typically contain 30 Oreos per package. Ensure not to sneak a taste, as you'll require every single Oreo for these cookies & cream brownies.
Fun fact: The number of Oreos in packages can vary! While regular Oreos used to contain 45 cookies per package, now it's around 36. Double Stuf Oreos typically come with 30.
You'll use 24 Oreos on top of the brownie batter and crush the remaining 6 Oreos for the cookies & cream buttercream frosting.

Chocolate Topping
This chocolate topping is a decadent version of chocolate ganache. Comprising only chocolate and butter, this rich chocolate layer sets perfectly. It's not overly sticky, yet it remains soft enough to slice through effortlessly. When it comes to cutting through layered brownies, things can get a bit messy, but fret not—I've included some helpful tips for you in my recipe notes.
Cookies & Cream Brownies
'Tis the season, and if you're aiming for a festive twist on these cookies & cream brownies to complement your Christmas cookies, I have a couple of ideas in store:
Peppermint Twist: Crush some candy canes and sprinkle them over the top of the brownies before baking. The cool peppermint flavor adds a delightful holiday touch.
Festive Drizzle: Melt some white chocolate and drizzle it over the cooled brownies in a festive pattern. You can even add some red and green food coloring to the white chocolate for an extra Christmassy vibe.
These simple additions will elevate your cookies & cream brownies and make them perfect for the holiday season!
- Add 1 teaspoon of peppermint extract to the brownie batter
- OR add 3/4 teaspoon of peppermint extract to the cookies and cream buttercream
- Use mint Oreos instead!
- Top chocolate with crushed candy canes or red/green sprinkles
Or even add 1/2 teaspoon of peppermint extract to the brownie batter and 1/2 teaspoon to the buttercream. Always use peppermint extract sparingly because it’s a fine line between delicious peppermint flavor and… toothpaste flavor.

Brownies:
- Homemade brownie batter OR 1 9×13-inch pan brownie batter
- 24 Oreos (Double-Stuf Oreos recommended)
Cookies & Cream Buttercream:
- 3/4 cup (12 Tbsp; 170g) unsalted butter, softened to room temperature
- 3 cups (360g) confectioners’ sugar
- 2 tablespoons milk
- 1/2 teaspoon pure vanilla extract
- 6 whole Oreos, chopped (about 3/4 cup, or 70g)
- Pinch of salt
Chocolate Topping:
- 1/2 cup (8 Tbsp; 113g) unsalted butter
- 1 heaping cup (around 200g) semi-sweet chocolate chips*
